We all know that vegetables are good for our health, but it can be hard sometimes for people to go out of their way to eat them. Most of the time, vegetables are a healthy addition to a meal that complements the main feature like meat or carbohydrates, but not necessarily a go-to food item.

However, grilled vegetables change all of that. If you make the right choice of vegetables and grilling techniques, vegetables might just become your new favorite food. Here are some of the best vegetables for grilling or barbequing.

Corn on the Cob

An old classic, take a whole corn and grill it until it has nice black stipes running across it. Serve with butter.

Eggplant

Grilled eggplant is beautiful on its own, combined with other vegetables or in curries, stir-fries, or salads. You can cut big slices or grill them into little cubes.

Mushrooms

Strictly speaking, a mushroom is not a vegetable. But they are a great complement to the other vegetables on this list and deserve to be counted among them.

Broccoli

Surprising as it might be to some, when broccoli is done right the taste is absolutely divine. Grill it just enough that the top is a little chargrilled and it’ll be great in curries, stir-fries, or barbeques.
