You’re craving some brownies but have no eggs for brownie mix? There is no need to go to the grocery store and pick up some. They are far too expensive these days and you actually don’t need them. Instead, simply use one of these substitutes.
Mayonnaise
Mayonnaise isn’t usually associated with desserts but trust us on this one. Mayo already contains eggs and oil, which are the two main ingredients used for the brownie mix. It will pack brownies with a more robust flavor and keep them moist. Use three tablespoons of mayo to replace one egg.
Greek Yogurt
Greek yogurt is the perfect egg substitute for brownie mix. It will result in a similar consistency while also adding richness, especially if you decide to use a flavored version. Use ¼ cup of Greek yogurt as a substitute for one egg.
Mashed Bananas
Mashed bananas also provide great results as egg substitutes. However, note that the banana flavor can be overpowering, although we don’t see that as a bad thing. Use ¼ cup mashed banana for every egg you intend to add to the brownie mix.
Applesauce
Applesauce will do a similar job to mashed bananas but it won’t affect the taste of brownies that much. You can use ¼ cup applesauce to substitute one egg.
