Overnight oats are one of the best breakfasts. They’re super simple to make, and save you loads of time in the mornings. They’re also way healthier than sugary cereal, and the slow-releasing energy in oats will keep you feeling fuller for longer. This breakfast is also really high in fibre which is great for heart and gut health. This recipe can be adapted to suit your tastes.

Ingredients:

  • (Serves 1)
  • ½ cup of oats
  • 1 tablespoon chia seeds
  • ½ cup of milk of your choice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Optional:

  • 1 tablespoon desiccated coconut
  • ¼ cup of dried fruit
  • 1 tablespoon pumpkin seeds

Optional toppings:

  • Banana
  • Berries
  • Nut butter
  • Greek yogurt
  • Honey

Instructions:

  1. In a bowl, mix the oats, chia seeds, cinnamon, nutmeg, and milk. Add any of the optional ingredients that you want. Make sure it’s thoroughly mixed together with no clumps.
  2. Cover the bowl and then pop this in the fridge before going to bed. If you remember later that evening, give it another stir to stop the chia seeds from clumping.
  3. In the morning take the mixture out of the fridge. Stir it through again, and then top with whatever you fancy.
