Fresh and Delicious Vegetable Salad

There’s nothing like a delicious and fresh vegetable salad. This one happens to be made with vegetables featuring five colors and it’s nutritious, refreshing, and suitable as a meal or as a delicious side dish to any dinner table. To make this yummy dish, all you need is a handful of veggies and 10 minutes. 

Ingredients:

For The Salad:

  • 1 cucumber
  • 1 red pepper
  • 1 yellow pepper
  • 5 cherry tomatoes
  • 1 ripe red tomato
  • 6 pitted black olives
  • 2 tablespoons corn kernels
  • A handful of fresh oregano leaves or basil leaves

For Seasoning:

  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Tablespoon fresh thyme
  • Salt and pepper to taste

Instructions:

  1. Finely chop all the vegetables, one by one, and place them in a large mixing bowl. Add the olives and corn, and mix.
  2. Add all the sauce ingredients and mix well.
  3. Sprinkle fresh oregano and basil on top, and serve immediately.
  4. To the basic salad, you can add a generous slice of feta cheese, tahini sauce, hard-boiled egg, smoked or roasted salmon, canned sardines, or roasted tofu.
