There’s nothing like a delicious and fresh vegetable salad. This one happens to be made with vegetables featuring five colors and it’s nutritious, refreshing, and suitable as a meal or as a delicious side dish to any dinner table. To make this yummy dish, all you need is a handful of veggies and 10 minutes.
Ingredients:
For The Salad:
- 1 cucumber
- 1 red pepper
- 1 yellow pepper
- 5 cherry tomatoes
- 1 ripe red tomato
- 6 pitted black olives
- 2 tablespoons corn kernels
- A handful of fresh oregano leaves or basil leaves
For Seasoning:
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- Tablespoon fresh thyme
- Salt and pepper to taste
Instructions:
- Finely chop all the vegetables, one by one, and place them in a large mixing bowl. Add the olives and corn, and mix.
- Add all the sauce ingredients and mix well.
- Sprinkle fresh oregano and basil on top, and serve immediately.
- To the basic salad, you can add a generous slice of feta cheese, tahini sauce, hard-boiled egg, smoked or roasted salmon, canned sardines, or roasted tofu.
