Ingredients:

  • 2 medium zucchinis, spiralized or thinly sliced into noodles
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup of chopped fresh basil leaves
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)
  • Lemon zest (optional, for garnish)

Instructions:

  1. In a large skillet or sauté pan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
  2. Add the spiralized or thinly sliced zucchini noodles to the skillet, stirring to coat them evenly with the garlic-infused oil. Cook for 3-4 minutes, or until the zucchini noodles are just tender but still retain a slight crunch.
  3. Add the halved cherry tomatoes to the skillet, tossing them with the zucchini noodles. Cook for an additional 2-3 minutes, or until the tomatoes are heated through and start to soften.
  4. Stir in the chopped fresh basil leaves, reserving a small amount for garnish. Season the zucchini pasta with salt, pepper, and red pepper flakes to taste, adjusting the seasoning as needed. Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the zucchini pasta. Toss gently to combine, allowing the cheese to melt slightly and coat the noodles.
  5. Transfer the zucchini pasta to serving plates or bowls, garnishing with the remaining chopped basil leaves and a sprinkle of lemon zest for a burst of freshness. Serve hot, accompanied by crusty bread or a green salad for a complete and satisfying meal.
