We all know that eating fresh fruit and vegetables is good for us, but certain plants can really pack a nutritional punch. If you’re looking to increase the variety of the plants you eat, and benefit from multiple vitamins and nutrients, then consider adding these three plants to your basket next time you shop.

Mushrooms

Fungi boast incredible health benefits, and recent research indicates that they can reduce the risk of some cancers, lower overall sodium intake, reduce cholesterol and protect brain health. Try them fried in a little butter and garlic, placed on top of a pizza, or stirred through a risotto.

Blackberries

Dark fruits, including blackberries, bilberries, plums, and dates, contain antioxidants that can reduce harmful free radicals in the body. These tasty berries can also heal wounds faster, help to regenerate the skin, and assist the body in absorbing iron. Try them over your morning cereal, cooked down into a compote to eat with yogurt, or even in a cake.

Spinach

One of the most widely used salad leaves is also one of the healthiest – spinach is well known for its high iron content, but it can also benefit the skin, hair, and bone health. Like mushrooms, there is evidence to suggest that regularly consuming spinach can reduce the risk of some cancers, and it is also heralded for its high calcium content. Try it in smoothies, soups, stews, on toast with egg, stirred through pasta – there are so many ways to use spinach, and all of them are delicious!

Have you ever wondered what would work as the perfect topping for ice cream, waffles, yogurt, and so much more? One of our favorite picks is a sauce with a base of cooked berries, thanks to the amazing combination of sweet and tangy that it brings to the table. So if you’re thinking about branching out and trying to make your own version of this tasty sauce at home, here’s how you can do it!

Ingredients

  • ½ cup blackberries
  • ½ cup blueberries
  • ½ cup raspberries
  • 2 tablespoons lemon juice
  • ½ tablespoon sugar
  • 1 ½ tablespoons water

Instructions

The first thing you’ll want to do is add all of the ingredients of your sauce to a medium saucepan on your stove. Once they’re all in and mixed together thoroughly, turn up the heat to medium-high and bring to a simmer. As the mixture is warming, constantly mix with a wooden spoon in order to ensure that things do not stick or burn to the saucepan.

Once the mix is simmering, reduce the heat to medium-low and allow to cook until it has reached a mildly runny but not completely liquid texture. Allow to cool and serve fresh on whatever food you would like! If you want to save this sauce or have some leftover, you can put it in a seal-tight jar and store refrigerated for up to a week. Enjoy!
