Sometimes, making a quick, nutritious, yet delicious meal sounds like an impossible challenge, especially when you’re short on time. Fortunately, this doesn’t have to be the case. Here is how you can make a quick, easy, and scrumptious shaved carrot salad.

Ingredients:

  • 6 medium carrots
  • 1/2 teaspoon salt
  • 1/2 cup sliced scallions
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame seeds
  • 1 small clove garlic
  • 3 tablespoons tahini
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 teaspoons ginger

Instructions:

  1. In a medium bowl, whisk together ginger, soy sauce, garlic, vinegar, olive oil, and salt. Once combined, add a tablespoon of cold water and whisk together.
  2. Shave the carrots and then chop the remaining carrots into matchsticks.
  3. Toss all of the carrots and the salad ingredients into the salad bowl and toss with tongs to ensure that they’re well mixed. Drizzle salad dressing over the salad.

Everyone’s morning routine is different. Some need a strong cup of espresso to get the day started, some just drink a glass of water, and some go the extra mile and choose a freshly squeezed juice to start their day with. If you’re the third kind, and are looking to diversify your morning juice routine, you might want to consider trying a healthy, refreshing carrot juice.

Why Carrot?

For quite a few reasons, actually. Carrots are a great source of vitamin A, vitamin K, Vitamin C, calcium, and other valuable nutrients. They assist in strengthening the bones, improving eye and heart health, and balancing blood pressure levels.

You probably shouldn’t have carrot juice for breakfast every day, since consuming too much carrot can lead to an excess of beta-carotene, which can turn your skin yellow. But stick to two to three cups of carrot juice per week and you should be fine.

Recipe Time

Here’s what you need to make carrot juice:

  • A food blender
  • About 1/2 pound carrots (3-4 carrots)
  • 1 cup water
  • 1 lemon

Instructions:

  1. Wash and peel carrots (and lemon, if you chose to add one)
  2. Slice each into cubes (for optimal blending)
  3. Insert all ingredients into the blender
  4. Blend well!
