Ingredients:
- 6 medium carrots
- 1/2 teaspoon salt
- 1/2 cup sliced scallions
- 1 teaspoon soy sauce
- 1 teaspoon sesame seeds
- 1 small clove garlic
- 3 tablespoons tahini
- 3 tablespoons olive oil
- 3 tablespoons rice vinegar
- 2 teaspoons ginger
Instructions:
- In a medium bowl, whisk together ginger, soy sauce, garlic, vinegar, olive oil, and salt. Once combined, add a tablespoon of cold water and whisk together.
- Shave the carrots and then chop the remaining carrots into matchsticks.
- Toss all of the carrots and the salad ingredients into the salad bowl and toss with tongs to ensure that they’re well mixed. Drizzle salad dressing over the salad.
