If you ever make something that only calls for the whites of the eggs, don’t throw away the yolks! Just because you don’t need them for that recipe doesn’t mean they should go to waste. Instead, make one of these recipes and become inspired to be less wasteful and make more delicious things.

Mayonnaise

If you love mayo and want to give it a try making it yourself, now is a perfect time! All you have to do is combine 2 egg yolks with 1 teaspoon of vinegar or lemon juice, 1/2 teaspoon of salt, and 1/2 teaspoon of dry mustard if you want. Take an immersion blender and start mixing the ingredients, while you slowly pour in 1 cup of any kind of oil you want. It’s that easy!

Key Lime Pie

The custard part for Key lime pies are egg yolks, so all you have to do is combine 4 of them with a can of condensed milk as well as 1/2 cup of freshly squeezed juice and you have your filling! Pour into a graham cracker crust and you’re set.

Lemon Curd

This dessert spread is super easy to make because you are only combined egg yolks with sugar and lemon juice! Cook over low heat to combine until it thickens and serve at any breakfast or brunch.

Resepti Limetorttu – Key Lime pie Pohja: 100 g voita 1 dl fariinisokeria 1 ps Farina Pizza- ja piirakkapohjaseosta (300 g) 1 tl leivinjauhetta 1 tl Farina Ksantaania 1 kananmuna Täyte: 6 keltuaista 400 g kondensoitua maitoa 1dl kuohukermaa 5 limetin mehu (1dl) ja kuori 1 tl vaniljasokeria Marenki: 2 kananmunan valkuaista 1dl sokeria Valmista ensin pohja. Sekoita huoneenlämpöinen voi ja fariinisokeri. Nypi rasvan ja sokerin joukkoon Farina Pizza- ja piirakkapohjajauhot, leivinjauhe ja ksantaani. Vuoraa irtopohjavuoka (Ø 26cm) leivinpaperilla. Key lime pie is a southern classic that everyone loves. Follow the tips below and your pie is bound to come out great every time you make it.

The Limes

Although the name seems to say it all, unless you live in the Florida Keys, you don’t need to use real key limes for this recipes. The ones from the supermarket are not the freshest, so their flavor will not resemble a true Key lime. Rather than spending a ridiculous amount of money on a bag and squeezing 20 small key limes, buy regular limes instead. The end product will not be noticeable and you’ll be able to make it for a fraction of the cost.
