]]>One of the simplest ways to keep lettuce fresh includes nothing but a piece of paper towel. If you usually keep the lettuce in a bag it came with, you’ve probably noticed the moisture forming inside it, which leads to a shorter lifespan.
Lettuce needs moisture and air circulation to stay fresh, and you can provide that by putting a damp paper towel at the bottom of the plastic container before putting the lettuce on top of it.
It may seem counterintuitive but it will work like a charm. The damp paper will keep the lettuce from drying out while keeping it crisp as it allows airflow. The same method can be applied for pre-packed lettuce and for whole heads, but if you buy lettuce in heads, make sure to chop, wash, and dry it first before storing it as described above. Not only it will last longer but it will be ready to just grab for a quick meal!

]]>Chicken Roll in Iceberg Lettuce
Ingredient List
It’s so tasty and relatively easy to make, this is one great and quick home cooked meal. All you need are these ingredients:
1 lb. breast of chicken cut into small pieces
1/2 an onion cut into slim strips
2 tbs. Canola oil
1 red bell pepper cut into stips
1 yellow bell pepper cut into strips
3 garlic cloves chopped
Fresh mango peeled and cut into slivers
Some chopped peanuts
Scallions to garnish
Salt
Black pepper
1/2 tsp. Cumin
Red chili pepper thinly sliced
Iceberg lettuce separated into leaves
Steamed white rice
Sauce
3 limes freshly squeezed
3 tbs. olive oil
1 tbs. brown sugar
Salt to taste
Let’s Cook
Sautee the onion in canola oil in a large skillet until light brown. Add the cut breast of chicken, red and yellow bell peppers, and chopped garlic cloves. Spice it up with red hot chili pepper slices, salt, coarse black pepper and cumin.

Now Put it all Together
Prepare the sauce on the side by stirring the freshly squeezed lime juice, olive oil and brown sugar in a small bowl. Place in each iceberg lettuce leaf some of the white steamed rice, chicken and vegetables, slices of mango, scallions and chopped roasted peanuts – add the sauce and roll.
