Shakshuka is the perfect brunch dish. It’s savory, it’s filling, it’s flavorful, and it’s easy to make. But the one downfall is that it contains eggs, which makes it unsuitable for vegans. But of course, that won’t stop us from creating a modified recipe that is plant-based. It even has the protein that shakshuka has and a distinctly eggy flavor! Check it out below.

Ingredients

  • Olive oil
  • Onion
  • Garlic
  • Red pepper
  • A can of chopped tomatoes
  • Tomato pasta
  • Cumin
  • Paprika
  • Chili powder
  • Salt
  • Silken tofu
  • Himalayan sea salt
  • Turmeric
  • Black pepper
  • Parsley

Instructions

  • Chop the onions and red pepper. Mince the garlic.
  • Heat up olive oil in a large, heavy pan on low to medium heat.
  • Add onions to the pan and cook until they become translucent.
  • Add garlic, cooking for another two minutes until garlic becomes fragrant.
  • Add red pepper and cook until soft.
  • Add cumin, paprika, and chili powder. Cook for a minute, stirring continuously.
  • Stir in the tomato paste and canned tomatoes, plus a splash of water. Season with salt.
  • Let the mixture cook down for 30 to 40 minutes, stirring every so often.
  • Dice up the tofu. Season with turmeric and sea salt.
  • Once the sauce has thickened up, add the tofu into it. Continue to cook until the tofu is warm.
  • Serve with a garnish of parsley and bread on the side. Pita bread is recommended for authenticity!

A very popular Middle Eastern breakfast dish, shakshuka is basically the dream breakfast. It’s spicy, savory, filling, has plenty of nutrients and protein, and will give you all the energy you need to start your day. And making it is actually quite simple, requiring only basic ingredients. Here’s how you do it.

Ingredients

  • Diced onion
  • Diced red bell pepper
  • Chopped garlic
  • Paprika
  • Cumin
  • Chili powder
  • Whole peeled tomatoes
  • Eggs
  • Salt
  • Pepper
  • Cilantro
  • Parsley

Directions

  • Heat up olive oil in a large pan on medium heat.
  • Add onion and bell pepper, cooking until the onion becomes translucent, which should take about five minutes.
  • Add garlic, paprika, cumin, and chili powder. Cook for a couple more minutes.
  • Add the tomatoes and their juice, breaking them down using a wooden spoon.
  • Season with salt and pepper and bring to a simmer.
  • With your wooden spoon, make wells in the sauce.
  • Crack eggs into each well.
  • Cover the pan.
  • Cook until the eggs are done to your preference.
  • Serve, garnishing with cilantro and/or parsley.

Typically, shakshuka is served with a side of bread to dip into the sauce, so we highly recommend getting some pita to go along with your breakfast!

Whether it’s been a cold day and you want something warm in your belly, or you want a healthy hearty meal that can easily be made vegan, chili is an awesome go-to recipe. You can basically throw anything into it, which means in the end you have probably more chili than you anticipated.

Chili Dogs

A classic chili dog cannot be beat, and it’s really a special treat that probably isn’t made enough at home. All you have to do is grill some hot dogs – either meat or soy – put them in buns, and top them with your chili and some grated cheese! You can also add relish, diced onions, or whatever other toppings you like.

Shakshuka is a North African egg dish, where the eggs are poached in tomato sauce. Since there is already a lot of tomatoes in chili, why not use it in place of the sauce! If your sauce is really thick, add a little more tomato sauce and then heat it up, drop the eggs in, and you have an awesome protein-packed dish!
