Shepherd’s pie getting a bit boring? Shake things up with this cauliflower twist! This recipe reimagines the classic comfort food with a lighter, healthier, and equally delicious twist. Think fluffy cauliflower mash blanketing tender ground meat and flavorful veggies, all baked to cheesy perfection. Let’s jump in. 

Ingredients

For the Filling

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef or lamb
  • 1 cup frozen peas
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 cup beef or vegetable broth
  • Salt and pepper, to taste
  • Fresh thyme, chopped (optional)

For the Cauliflower Mash

  • 1 large head cauliflower, cut into florets
  • 1/4 cup heavy cream or milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Paprika, for garnish (optional)

Instructions

  1. Saute onions and carrots in olive oil until soft, then add garlic. 
  2. In the same pan, brown ground meat on medium-high, stirring in peas, tomato paste, broth, Worcestershire sauce, and seasonings. Simmer to thicken, about 10 minutes, and place in a baking dish. 
  3. Puree steamed cauliflower with cream, butter, and cheddar, seasoning with salt and pepper. 
  4. Spread mash over meat, top with cheese and paprika. 
  5. Bake at 400°F for 20-25 minutes until golden. Serve warm, and enjoy.
