Ingredients
For the Filling
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 lb ground beef or lamb
- 1 cup frozen peas
- 2 teaspoons Worcestershire sauce
- 1 tablespoon tomato paste
- 1 cup beef or vegetable broth
- Salt and pepper, to taste
- Fresh thyme, chopped (optional)
For the Cauliflower Mash
- 1 large head cauliflower, cut into florets
- 1/4 cup heavy cream or milk
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Paprika, for garnish (optional)
Instructions
- Saute onions and carrots in olive oil until soft, then add garlic.
- In the same pan, brown ground meat on medium-high, stirring in peas, tomato paste, broth, Worcestershire sauce, and seasonings. Simmer to thicken, about 10 minutes, and place in a baking dish.
- Puree steamed cauliflower with cream, butter, and cheddar, seasoning with salt and pepper.
- Spread mash over meat, top with cheese and paprika.
