This ‘Wine and Cheese’ pairing has now lasted from a hundred of years and is still evaluating from generations to generations. Wine and cheese are extremely good on its own, but when you pair both, it’s like if magic just happened. But, what makes you feel that way? Why is this combo that delicious?

Tannin.
Tannin it is. Tannin is the main reason why wine goes so well with cheese and cheese so well with wine. Tannins are natural organic compounds that are found in grape skin as well as in seeds and stems. They are often added to wine for the texture, structure and preservation.

You may ask yourself, what has tannin to do with the wine and cheese pairing? Scientists have found that high fat and high protein foods balance the taste of tannin. That makes cheese the perfect food to go with wine. This combo causes the mouth to pucker up, with a fatty food, which makes the mouth feel slippery.
