The Perfect Creamy Chicken Coconut Curry Recipe

In the Curry family, you have three types of people.Type A, who loves curry and will always order a curry dish in a restaurant. Type B, who are kind of skeptical about the whole curry thing, and then you have the type C that hates curry (if that even exists).

If you are part of the type A and you love curry, make this dish! Also for type B and C, maybe this dish will create a new and strong love inside of you, for curry.

This recipe is usually done in a slow cooker, but if you don’t have one, no need to hurry to the store and buy one, you can also do it on the stove.

Serves 4.
Prep Time: 10 min.
Cook Time: 4 hours.

Ingredients:
* 3 boneless skinless chicken breast, chopped into small cubes
* 1 red pepper, seeded and thinly sliced
* 2 small potatoes, peeled and chopped
* 1/2 white onion, chopped

Ingredients for the Sauce:
* 2 cups chicken broth
* 2 cups unsweetened coconut milk
* 3 tbsp yellow curry powder
* 1 tsp cumin
* 1 tsp salt

Instructions:
1. Add chicken pieces, red peppers, potatoes and onions to the slow cooker.
2. In a medium bowl, whisk together the chicken broth, curry powder, cumin, salt and pepper. Pour mixture into the slow cooker and stir to coat chicken and vegetables.
3. Cover and cook on high for 2-3 hours or on low for 4-5 hours.
4. Serve with cashers, cilantro and cooked rice.
