If you’re planning on hosting a summer get-together, you’ll want to plan the meal and snacks you’ll be serving well in advance. Even if your event is decidedly casual, nothing ruins the fun more than stressing about some last-minute kitchen preparations or worrying about whether your main course will be burned or underdone. That’s why this simple yet delicious traybake is such a fantastic option—it’s flavorful, fancy and fun to put together.
Ingredients (to serve 8):
- 6 fillets of white fish of your choice
- 2 cups of new potatoes, scrubbed clean if needed
- 1 head of broccoli
- 2 white onions
- 3 cloves of garlic
- 1/2 cup of white wine
- 1 cup of vegetable stock
- 1 can of tomatoes
- Salt and pepper, to taste
Instructions:
- Bring a large pan of salted water to the boil and cook the potatoes for 5 – 6 minutes.
- Drain the water and allow the potatoes to cool.
- Slice the broccoli into even-sized pieces and finely slice the onions.
- Crush the garlic and mix this into the tomatoes.
- Layer the fish fillets, potatoes, broccoli and onions into a large baking tray.
- Pour over the stock, tomatoes and wine and season to taste.
- Bake in an oven heated to 400° F for 25 – 30 minutes.
