She uses Maris Piper potatoes (3 pounds), 1 cup of rendered beef fat, 1 tablespoon sea salt, and 4 cups vegetable oil. You can see the process on her page. The potatoes are sliced thinly, coated with fat, baked till perfection, then cut into chunks and fried. Seems too much? It’s too tempting to not try! 12 of the 15 hours from the recipe are needed to chill the potatoes in the fridge, so you can start in the evening and finish them right on time for breakfast.
