]]>Make sure you properly drain the tofu before you cook it. Put your tofu on a plate and then press on it firmly using a few sheets of kitchen paper. For maximum impact, place a chopping board on top of the tofu and leave to drain for twenty minutes.
Next, mix cornflour together with a little salt, pepper and garlic. Chop your tofu into small cubes or strips.
Coat the tofu in the cornflour. Heat a non-stick frying pan with oil. Fry the tofu on each side until it is golden around the edges. Do your best to cook evenly on each side.
Season with a little soy sauce or chili to serve. Tofu is best served with sticky rice in a tasty teriyaki sauce.

]]>Fresh eggs have a thicker white which will make the eggs set easier in the middle. Free-range eggs are tastier and higher quality in general.
Instead of cracking your egg straight into boiling water, crack your egg into a bowl first. This makes it easier to slide into the pan.
Fill your pan about halfway with water and boil. When the water starts to boil, bring it down into a simmer. Stir the water to create a whirlpool effect prior to adding your egg to the pan.
Next, tip the egg slowly into the pan. Keep the heat low and cook for three minutes or until the egg white is set.
To remove the egg from the pan, use a slotted spoon to gently lift the egg. Add salt and pepper to taste and voila, you have the perfect poached egg!
