All you need for this dish is 30 minutes of your time and some good quality red or green Thai curry paste. This yummy curry goes great with cooked white rice or mixed with cooked rice noodles.

Ingredients:

  • 1 can of coconut milk
  • 1 chopped red pepper
  • 8 sliced ​​mushrooms
  • 1 cup sliced ​​tofu
  • 1 chopped onion
  • 1 clove chopped garlic
  • 1 tablespoon chopped ginger root
  • 2 tablespoons oil
  • 2 tablespoons soy
  • 2 tablespoons Thai curry paste (green or red)
  • 2 tablespoons Thai basil leaves

Instructions:

  1. Fry the onion in hot oil until golden.
