Bite Down On This Brat Summer Pasta

With Charli XCX’s album “brat” fast becoming the hit of the summer, it appears as if brat fever is taking over everywhere you go. One tasty way to celebrate is with this feisty and scrumptious Brat Summer Pasta.

Ingredients:

  • 1/4 teaspoon black pepper
  • 1 ounce Parmesan
  • 1 cup basil leaves
  • 1 tablespoon lemon juice
  • 2 cups spinach
  • 2 cloves garlic
  • 2 ounces cream cheese
  • 8 ounces short pasta
  • Kosher salt

Instructions:

  1. Cook the pasta according to package instructions in a pot of boiling water until al dente.
  2. Transfer the pasta to a large bowl. Keep the pasta water in the pot.
  3. Add 1 tablespoon of oil to the pasta and toss to coat.
  4. Boil the pasta water. Add the spinach and cook for about 30 seconds, until wilted.
  5. Place the spinach into a colander and run under cold water until cool. Squeeze as much liquid out of the spinach as possible.
  6. Transfer the spinach to a blender. Add the Parmesan, garlic, cream cheese, pepper, lemon juice, 1/4 cup cold water, and remaining oil. Blend on high for about 1 minute. Season with salt.
  7. Pour the sauce into the bowl of pasta and toss to coat. Sprinkle more parmesan on top.
