This Recipe for Trout Pasta is Delicious

Ingredients:

  • 2 fresh trout fillets
  • 9 ounces of pasta (such as spaghetti or linguine)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (or vegetable/chicken broth)
  • 1 lemon (zest and juice)
  • 2 tablespoons fresh parsley or dill, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
  2. While the pasta cooks, season the trout fillets with salt, pepper, and a squeeze of lemon juice. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the trout fillets in the skillet, skin-side down, and cook for 3-4 minutes until the skin is crispy. Flip the fillets and cook for another 2-3 minutes until the trout is cooked through and flakes easily with a fork. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften. Pour in the white wine (or broth) and let it simmer for a few minutes until the sauce reduces slightly. Add the lemon zest and juice, stirring to combine.
  4. Add the cooked pasta to the skillet with the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a bit of the reserved pasta water to loosen it. Gently flake the trout into bite-sized pieces and fold it into the pasta. Stir in the fresh parsley or dill.
  5. Divide the trout pasta among plates and top with grated Parmesan cheese if desired. Drizzle with a bit more olive oil and serve immediately.
