Vegan Rice Pilaf with Butternut Squash and Green Beans

This vegan dish is a great solution for a mid-week day. It is very quick to make and really notorious. Try using basmati rice, but if you can’t get it, any white rice will do.

Ingredients:

  • 2 cups of white rice
  • 3 cups of vegetables stock or water
  • 3 tablespoons vegetable oil
  • 300 butternut squash sliced into 2 cm cubes
  • 2 cups of green beans
  • 3 tablespoons of pine nuts
  • 2 finely chopped garlic glove
  • Salt and pepper

Instructions:

  1. In a medium-size pot warm the oil and then add the chopped garlic and stir for 2 minutes.
  2. Add in the butternut and the green beans and stir well. Fry until the butternut is getting a golden color.
  3. Add in the rice and mix well. Let the rice fry for 2 minutes before adding the stock or water. Season with salt and pepper and give it all a good stir.
  4. Bring to boil and then cover the pot and reduce to low heat. Cook for about 20 minutes until the rice is ready and the butternut is soft.
  5. Let the pilaf sit for 10 minutes before moving it into serving bowls and sprinkle some pine nuts on top. Enjoy.
