Ingredients:

  • 2 pounds of cleaned fresh mussels
  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves of garlic
  • 1 cup of dry white wine
  • 1 cup of chicken or vegetable broth
  • 1 cup of crushed tomatoes
  • 1 teaspoon dried thyme
  • Salt
  • Black pepper
  • Fresh parsley, chopped, for garnish
  • 4 large russet potatoes, cut into thick strips
  • Vegetable oil for frying

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
