The 3 Best Chia Seed Pudding Desserts

Chia seeds may not seem like an obvious candidate to make a delicious dessert, but they have a magical property. When added to liquid, the seeds take on a thick, gelatinous texture, which isn’t unlike a mousse or jelly. For this reason, vegans (and anyone who’s a fan of the little seeds) have been using them to create simple, healthy, and tasty desserts. Here are three ideas to try out.

Chocolate Chia Dessert

Ingredients:

(serves 4)

  • 1/4 cup of chia seeds
  • 2 cups plant milk
  • 3 tbsp cocoa powder
  • 2 tbsp maple syrup

Instructions:

Mix the cocoa powder and maple syrup together until they are well combined. Add this to the plant milk, stir well. Add the chia seeds, stir well for 2 minutes. Leave the mix for at least one hour, but ideally overnight, so that the chia seeds have a chance to absorb all the liquid. Serve in bowls with fresh berries, if desired.

Mango Chia Pudding

Ingredients:

(serves 4)

  • 1/4 cup of chia seeds
  • 1 cup plant milk
  • 1 cup mango puree or pulp

Instructions:

Stir the mango puree into the plant milk. Add the chia seeds, stir well for 2 minutes. Set aside for at least one hour, but ideally overnight. Serve with some slices of fresh mango, for a truly tropical flavor.

Kiwi and Lime Chia Pudding

Ingredients:

(serves 4)

  • 1/4 cup of chia seeds
  • 1 cup of plant milk
  • 2 tbsp lime juice
  • 3 kiwis, blended into a pulp

Instructions:

Mix the kiwi pulp and lime juice into the plant milk. Add the chia seeds, stir well for 2 minutes. Set aside for at least an hour, but ideally overnight.
