Cabbage is one of the most useful veggies to keep in your crisper drawer. It can be served raw or cooked, and with so many varieties, it lends itself to many different cuisines. Whether you prefer red or green, here are some ways to get the most out of the leafy crop. 

Kimchi

The Korean method of fermenting vegetables is not only delicious, it’s extremely good for your gut health. Cabbage is traditionally used to make the side dish which is a staple at practically every meal. Pickle the cabbage in a solution of water, salt, sugar, garlic, fish sauce, and other seasonings.

Coleslaw

One of the most popular ways to enjoy cabbage is in its natural form — raw and crunchy. Shred any color cabbage you like, toss it with carrots, nuts, raisins, edamame beans, and anything else you wish. You can then dress the salad with a tangy mayo vinaigrette or give it an Asian twist with a spicy peanut sauce.

Cabbage Rolls

Another traditional food, this time from Eastern Europe, is cabbage rolls. Ground beef or pork are mixed with rice, stuffed into cabbage leaves and simmered in a tomato-based sauce. The recipe varies from country to country, but is a feature at almost every gathering.
