Originally from Valencia, Spain, horchata was traditionally made with tiger nuts. But since then, horchata has taken on various forms in different cultures. The Mexican version, particularly popular throughout North America has a wonderful creamy texture and soothing spice notes. Here’s how you can make this delicious drink at home.

Ingredients:

  • 1 cup uncooked long-grain white rice
  • 4 cups water
  • 1/2 cup milk (use almond, rice, or coconut milk for a vegan version)
  • 1/2 to 3/4 cup granulated sugar (based on your sweetness preference)
  • 1 cinnamon stick 
  • 1 teaspoon vanilla extract
  • Ground cinnamon, for garnish

Instructions:

  1. Rinse your rice under cold water. Place the rinsed rice in a bowl with the cinnamon stick and cover with 4 cups of water. Soak at room temperature for at least 8 hours, or overnight. 
  2. Remove the cinnamon stick and pour the rice and water into a blender. Add vanilla extract and blend until the rice is completely pulverized.
  3. Strain the mixture through a fine mesh sieve or cheesecloth. 
  4. Transfer the strained liquid into a pitcher. Stir in the milk and sugar. 
  5. Refrigerate the horchata until it is chilled.

Coffee is a huge part of so many people’s morning routine. There are so many different ways to have coffee and lots of people have a personal preference. If you want to get into making proper coffee at home, here is a rundown of some of the different options available to help you decide which to try out. 

Cafetiere

Also known as a French press, this option is great for making proper coffee and is useful when wanting large quantities. You’ll need to wait for it to brew and they can be a pain to clean up, but the result is delicious and there’s no waste from filter papers. 

Percolator 

This method produces incredible coffee but does take some time and attention. The coffee grounds are placed in the compartment in the middle of the percolator with water in the bottom. This is then placed on the hob to bubble the water into the coffee. You need to pay close attention, so this isn’t ideal if you are preoccupied. 

Aero-Press

This fairly new process uses a device that creates a vacuum to push the coffee through a filter paper. This option is great if you want delicious coffee quickly and with no mess. Once filtered through you can simply push the coffee grounds out straight into the compost.

Here is how you can concoct the Sbagliato in your own kitchen or bar at home.

Ingredients

  • 1 ounce Campari
  • 1 ounce sparkling wine
  • 1 ounce sweet vermouth
  • 1 orange slice

Instructions

  1. Get a rock glass and add some ice cubes. Add the Campari and vermouth to the glass and stir for 20 seconds.
  2. Gradually pour the sparkling wine and stir gently.
  3. Garnish with an orange slice and enjoy.

Coffee is a huge part of so many people’s morning routine. There are so many different ways to have coffee and lots of people have a personal preference. If you want to get into making proper coffee at home, here is a rundown of some of the different options available to help you decide which to try out. 

Cafetiere

Also known as a French press, this option is great for making proper coffee and is useful when wanting large quantities. You’ll need to wait for it to brew and they can be a pain to clean up, but the result is delicious and there’s no waste from filter papers. 

Percolator 

This method produces incredible coffee but does take some time and attention. The coffee grounds are placed in the compartment in the middle of the percolator with water in the bottom. This is then placed on the hob to bubble the water into the coffee. You need to pay close attention, so this isn’t ideal if you are preoccupied. 

Aero-Press

This fairly new process uses a device that creates a vacuum to push the coffee through a filter paper. This option is great if you want delicious coffee quickly and with no mess. Once filtered through you can simply push the coffee grounds out straight into the compost.

Choose Your Beans Wisely

The foundation of any great coffee starts with high-quality beans. For cold brew, opt for medium to dark roasts as they tend to yield a smoother, sweeter flavor profile that’s perfect for cold extraction. 

The Right Grind 

A coarse grind is ideal because it allows for a slow and even extraction, which is essential for developing depth and avoiding bitterness. 

Ratio Matters

A good starting point is a 1:8 ratio of coffee to water. This can be adjusted based on personal preference for stronger or milder brews. Using too little coffee can result in a weak, diluted taste, while too much can make it overly strong and bitter. 

Patience Pays Off

Finally, cold brew requires time to reach its full potential. A steeping time of 12 to 24 hours at room temperature or in the refrigerator is best. You can start with 16 hours and experiment from there.
