You’re craving some brownies but have no eggs for brownie mix? There is no need to go to the grocery store and pick up some. They are far too expensive these days and you actually don’t need them. Instead, simply use one of these substitutes.

Mayonnaise

Mayonnaise isn’t usually associated with desserts but trust us on this one. Mayo already contains eggs and oil, which are the two main ingredients used for the brownie mix. It will pack brownies with a more robust flavor and keep them moist. Use three tablespoons of mayo to replace one egg.

Greek Yogurt

Greek yogurt is the perfect egg substitute for brownie mix. It will result in a similar consistency while also adding richness, especially if you decide to use a flavored version. Use ¼ cup of Greek yogurt as a substitute for one egg.

Mashed Bananas

Mashed bananas also provide great results as egg substitutes. However, note that the banana flavor can be overpowering, although we don’t see that as a bad thing. Use ¼ cup mashed banana for every egg you intend to add to the brownie mix.

Applesauce

Applesauce will do a similar job to mashed bananas but it won’t affect the taste of brownies that much. You can use ¼ cup applesauce to substitute one egg.

You can make good meatballs at home just by following the recipe correctly and making sure you cook them properly. But if you want to have the best homemade meatballs that will turn your meatball subs or spaghetti into culinary perfection, there are some simple tips you need to follow.

Use the Right Meat Combo

Meatballs can be made with any ground meat. However, the best flavor is guaranteed by combining fatty meats. Combine two parts of ground beef with one part of ground veal and one part of ground pork for perfect results.

Don’t Skip the Egg Yolk and Breadcrumbs

Adding egg yolk and breadcrumbs soaked in milk to the meatball mixture is crucial. They serve as a binder, preventing the meatballs from falling apart during cooking while also providing moisture that will make them juicy and tender.

Mix Using Your Hands

Combine the meatball ingredients using your hands. This will evenly distribute the ingredients without overmixing, resulting in the best texture. Just make sure to wet your hands with cold water to prevent sticking.

Give it a Taste

After preparing the meatball mixture, take a small chunk and fry it in a pan. You can now taste it and see if you need to make any adjustments before cooking the rest.

Eggplant is a delicious veggie that is packed with all sorts of nutrients. However, in order to get the best version of it, you need to avoid a few mistakes when cooking it.

Using Overripe Eggplants

Overripe eggplants are bitter and have a tougher texture that doesn’t go away even if you cook it properly. You’ll recognize them by squishy texture and dark spots on the skin. Ripe eggplants, on the other hand, have glossy skin and have a firm texture that slightly gives when pressed.

Using Too Much Oil

Eggplants are notorious for absorbing oil, meaning you need to avoid using too much. If you go overboard, the eggplant will become a greasy mess.

Failing to Give Them Room to Breathe

Regardless of whether you are frying eggplants in a pan or roasting them in an oven, you need to give each slice some room to breathe. This will ensure they have enough space to release the moisture inside of them and be cooked to perfection. When crowded, they fail to get caramelized on the outside and don’t taste as good.

Going Overboard with Sauce or Cheese

You might think that you are improving eggplant by drenching it in sauce or covering it in loads of cheese. However, this will make them mushy and mask their flavor. Instead, be moderate and pack it with more flavors using light seasoning.

People have different views of what makes perfect French fries.  If you ask us, the perfect French fries need to be perfectly crispy. And we have discovered a way to make them like that every time. As it turns out, French fries need only one extra ingredient to achieve peak crispiness: cornstarch.

How to Make Perfectly Crispy French Fries

Despite sounding unconventional, coating the French fries in cornstarch maximizes the crispiness. It forms a thin layer on the fries that becomes super crispy when fried while also ensuring it remains soft on the inside.

Start by cleaning the potatoes, cutting them into French fries shape, and soaking them in water. Pat them with a clean cloth or paper towel. Next, sprinkle them with salt and olive oil before tossing them in cornstarch. You can use corn flour as a substitute and achieve the same effect.

After shaking off the excess cornstarch, bake them in an air fryer at 390F for 20 to 25 minutes. You can also deep fry them in oil at 325F for around five minutes.

The trick with cornstarch has been lauded as a “game changer” by almost everyone who tried it. So make sure you test it as well and see what you have been missing out.

Cheeses are aged for weeks or even months, so you shouldn’t worry about keeping them in the fridge for too long, right? Wrong. Cheese will age only under the right conditions, and only its outside is exposed to air. When sliced and kept in your fridge, it immediately starts being susceptible to accelerated growth of microorganisms, which in turn cause spoilage.

However, with proper storage, you can delay that spoilage and give you enough time to consume it.

How to Store Cheese

It goes without saying, but the only acceptable way to store cheese is to place it in the refrigerator. If left at room temperature, it can only last for a couple of hours.

Before storing the cheese in the fridge, you will need to protect it. You should avoid covering it in plastic wrap because it will spoil faster this way. The best method is to wrap it in specialty cheese paper or use parchment paper. If left uncovered, the cheese will dry out and also smell up your fridge. The best position for wrapped cheese is at the bottom of the fridge.

Once you’ve stored the cheese properly, the spoilage delay will depend on the type. Even if everything is done right, soft cheeses like brie can remain good for a week. Hard cheeses can be eaten for another month, while particularly hard cheeses like parmesan will be okay for up to two months.

Luckily, it is easy to notice when the cheese has gone bad. Pronounced rancid odor, development of mold, and change in texture are unmistakable signs of cheese spoilage.

Scrambled eggs are one of the easiest and most satisfying lunches out there. Eggs are high in protein as well as plenty of beneficial nutrients such as vitamin D and B vitamins. And whipping up scrambled ones to have on toast couldn’t be simpler. Here are some tips to take this easy meal even further.

Use Butter

Try using salted butter instead of vegetable oil to cook your eggs. Eggs are ultimately quite bland, and so they soak up flavors really well. Cooking them in butter will give them a deliciously rich, buttery taste that makes them much more appealing.

Be Careful With Heat

Scrambled eggs ideally want to be cooked on a low and slow heat. If they get too hot then they’ll quickly become dry and leathery which is not at all what you want. You can even take them off the heat a bit before they’re done and let the final cooking take place from their own residual heat.

Add Salt and Pepper at the End

It can be very easy to overdo the seasoning and end up ruining the overall flavor of the eggs. Adding salt and pepper early on also affects their flavor. Leave it to the end and sprinkle a tiny bit in – this will enhance the flavor without being too much.

As much as people talk down on leftover food, it is always better to have some than not. It provides us with a quick meal when we’re busy and, more often than not, tastes great.  Still, not all leftover food should be approached in the same way, at least not when it comes to reheating.

Some leftover foods don’t handle reheating well and lose their texture or taste, while others can make you sick when reheated. Continue reading to check out four leftover foods you shouldn’t reheat.

Leftover Steak

The steak is at its best when it’s freshly cooked and rested for several minutes. However, if you are left with some and later decide to reheat it, you are in for a disappointment. When stored in the fridge, the muscle fiber will contract, and no amount of reheating will cure the resulting toughness and dryness.

Leftover Rice

Reheating leftover rice is a big no-no. Actually, if you have leftover rice, you should throw it away. When sitting at room temperature, rice becomes susceptible to the development of bacteria known as Bacillus cereus. These bacteria won’t go away if you refrigerate the rice or reheat it and can cause food poisoning.

Leftover Eggs

Leftover eggs will have a rubbery and unsatisfying texture when reheated, so you are better off cooking them fresh. Additionally, if you overheat them, there is a chance of them spoiling enough to make you sick.

Leftover Mushrooms

Leftover mushrooms will deteriorate quite fast and become a welcoming ground for all sorts of bacteria. You shouldn’t risk eating them at a later date even if you have stored them in a fridge right after the meal.

If you’ve ever watched a cooking show and marveled at how effortlessly the chef slices through ingredients, you might be wondering about the secret to their success. Spoiler alert: it’s sharp knives. But how often should you be sharpening your own kitchen blades? Let’s dive in and find out.

General Sharpening Guidelines

As a general rule, most home cooks should aim to sharpen their knives every 3-6 months.

Factors Affecting Sharpening Frequency

The frequency of sharpening your kitchen knives depends on several factors. Usage plays a significant role—the more you use a knife, the more often it needs sharpening. A chef’s knife used daily might need sharpening every few weeks, while a rarely used bread knife could go months between sharpenings. The type of knife also matters. Softer steel knives need more frequent sharpening but are easier to sharpen, while harder steel knives hold their edge longer but are more difficult to sharpen when the time comes.

Why It Matters

Remember, a sharp knife is a safe knife. If you find yourself having to apply more pressure to cut, it’s time to sharpen up! Keeping your knives in top condition not only makes your cooking experience more enjoyable but also helps prevent accidents in the kitchen.

A lot of people take a different approach to cleaning mushrooms. Some wash them, others use a knife to clean them, and some just brush them. However, if you want to ensure that they are safe to eat and remain delicious, follow this guide.

How to Properly Clean Mushrooms

Most seasoned cooks don’t like to clean mushrooms with water and recommend brushing. The reason for this is that mushrooms easily absorb water, and water-heavy mushrooms are not great for cooking.

The Brush Method

If you are looking to clean mushrooms with the brushing method, you first need to get yourself a mushroom brush. They are easily found in home product isles and won’t set you back much. Carefully brush the dirt from the mushroom with gentle sweeps, making sure you get into any cavities until it’s dirt-free. You can then swipe them with a damp cloth for extra cleaning.

The Dunk Method

Those who intend to clean mushrooms with water should follow a few important steps to mitigate the water-absorbing effect. Fill a bowl with cold water and then submerge as much mushrooms as you can hold in your hand. Swirl them around the bowl for 10 to 15 seconds to remove dirt, and then quickly pat them with a paper towel.

Either of these methods will help you have clean and safe-to-eat mushrooms without affecting the quality.
