For this dish, you will need a ring mold in order to shape the dish. The shape of the tartare is crucial to the overall effect, so have one at the ready after you’ve prepped everything. If you don’t have one, you can use a cookie cutter as well.
Method
For the dressing, combine oil, vegan Worcestershire sauce, lemon juice, dijon mustard, and parsley together. Dice some tomatoes finely, and strain out as much moisture as you can. Then, dice an avocado and pour the dressing over it.
Platting
Take the ring mold and start layering the vegetables, first the avocado, then the tomatoes. Cut up a baguette and put it around the tartare and add a few slices of lemon and sprigs of parsley on the plate.
