Ingredients:
- 1 large head Cauliflower
- 1 tablespoon olive oil
- 1 small shallot
- 1 clove garlic
- 1 tablespoon brown sugar
- 1 tablespoon fish sauce
- salt
- freshly ground black pepper
- 1 lime juice and zest
- 1/4 cup cilantro
- 1/4 cup chopped peanuts
- 1/2 teaspoon red pepper flakes
Instructions:
- Heat your grill to medium and while you wait, cut the cauliflower into steaks. Baste olive oil over all sides of the cauliflower steaks and season with salt and pepper.
- Grill each “steak” for 8 minutes per side until charred.
- In a small bowl, add cilantro, garlic, sugar, lime juice and zest, red pepper flakes, shallot, and fish sauce.
- Place the grilled cauliflower on a platter and drizzle in the sauce before serving.
