Broccoli Rabe and Sweet Sausage Meatballs

Who doesn’t love meatballs? Whether dry or with a thick sauce, meatballs are a favorite of children and adults alike. Make this healthy version by adding broccoli to make the meatballs tastier, healthier, and more filling.

Ingredients:

Salt

Half a bunch of broccoli rabe (trim the tough ends)

3/4 pounds sweet Italian sausage with fennel seed (remove the casings)

1/2 cup of breadcrumbs (homemade then moistened using whole milk)

1 egg yolks (beaten lightly)

parsley (chopped)

1/2 tbsp lemon zest

2 cloves of garlic (finely chopped or grated)

1/2 cup of Pecorino Romano cheese (grated)

1 tbsp extra virgin olive oil

Method:

First of all, preheat your oven to 425°F then line some parchment over a baking sheet.

In a pot, bring some water to a boil then add some salt and the broccoli rabe. Cook the vegetables for about 3-5 minutes then drain, let cool, and chop.

In a bowl, place the sweet sausages. Add the breadcrumbs and the broccoli rabe which you’ve cooked and chopped. Also, ass the egg yolks, lemon zest, parsley, grated cheese, garlic, and the extra virgin olive oil then mix everything together until well-blended.

Scoop small amounts of the meatball mixture, form the meatballs, and arrange them on the baking sheet. Place the baking sheet in the oven and bake until golden brown and cooked through.
