With more and more of us becoming aware of the terrible state of the seas, making ethical, sustainable choices when it comes to choosing fish and seafood feels more important than ever. One of the most ethical choices is buying rope grown mussels, as these can be harvested without too much impact on other species, and they are relatively fast growing. If you feel a bit unsure about mussels, check out this easy recipe. Most of the mussels are disguised under a heavy sauce, and the flavors are out of this world!

Creamy Mussels

Ingredient (to serve 4):

  • 4 cups of mussels in shells, debearded and scrubbed (a good fishmonger should be able to do this)
  • 2 onions, finely diced
  • 2 garlic cloves, finely diced
  • 1 tablespoon of butter
  • 6 sprigs of thyme
  • 1/2 cup of white wine
  • 2 cups of cream
  • Salt and pepper

Instructions:

  1. Wash the mussels and discard any that won’t close when lightly squeezed.
  2. Heat the butter in a pan, add the onion and garlic and cook until softened.
  3. Add the thyme and the wine, increase to a high heat.
  4. Add the mussels, put a lid on the pan and steam for around 6 minutes until the mussels have opened.
  5. Remove any unopened mussels and the thyme sprigs.
  6. Stir in the cream and season well.
  7. Remove from the heat, spoon into bowls and serve with fried potatoes.

You can also serve this mussels alongside some cooked pasta, or simply with crusty bread to mop up all of the delicious juices.
