🥬🥔Crispy baked potato with sautéed cabbage and vegan ‘chorizo’ sausage. 🥬🥔 This may sound like a very random combination but it is really tasty! 😋 I have been trying to convince my boyfriend that cabbage is delicious, so I have used it in a variety of recipes. 🥬 I think it’s important to try to cook vegetables in a variety of ways before children or adults in this case decide whether they like something or not. So far I have made dumplings, egg fried rice and sautéed cabbage and he has enjoyed each dish. I just don’t want the poor cabbage to feel left out 😜 Ingredients Half a head of cabbage Half an onion 2 cloves of garlic Vegan chorizo 2 Tbsp of butter or olive oil Potato Tsp Lemon juice Tsp Paprika Salt and pepper Instructions: Preheat the oven at 150 degrees celsius. Place a pierced potato in the microwave for 7-8 minutes. When the oven is hot place the chorizo sausages in the oven till the beginning to brown. Take the potato out of the microwave and place on some tinfoil. Rub the potato in paprika, lemon juice, salt and pepper, and tbsp of olive oil. Once the potato is covered in this wrap in tinfoil and place in the oven for 30 minutes. In a medium heated pan add a tbsp of butter or olive oil. Allow to heat and then add garlic, and onion. After 1 minute add the cabbage to the pan and season. When the chorizo sausages have cooked chop them into pieces and add to the pan. Also add the juice from the chorizo sausages and mix in altogether. Potatoes are the perfect side dish for any meal and there are tons of different types of potatoes to choose from. One of our favorite ways to eat potatoes is jacket potatoes. Jacket potatoes (aka as baked potatoes) are fluffy on the inside and crispy on the outside. When they’re done cooking, they’re served with fillings and condiments like butter, cheese, sour cream, gravy, ground beef, and baked beans. So how can you get the perfect jacket potato that’s fluffy and crispy at the same time?

It all starts with choosing the right potato and in this case, Russet or King England potatoes are ideal. Their size and flavor are great for baking. The next step is to slice a cross-shape into your potatoes, about 1/4 inch thick. This makes them fluffy inside because it allows for the steam to escape. To get a crispy outside, brush the potatoes with extra virgin olive oil. Lastly, season them generously with salt and pepper.

Now it’s time to put them in the oven. They need to bake at 400 F for about 1 1/2 to 2 hours. Your next step is to take them out of the oven and to slice deeper into the existing cuts. Then place the potatoes in the oven for another 10 minutes.

As soon as your potatoes are done cooking, add butter and the toppings you choose. Don’t be afraid to get creative with your add-ons and enjoy your fluffy, crispy jacket potatoes!

Deliciously Cheesy Broccoli Stuffed Potatoes by @ItsAllGoodVegan 😋🥦🧀🥔 ⁣ .⁣ INGREDIENTS:⁣ Baked Potatoes🥔 ⁣ 8 medium russet potatoes, scrubbed and washed⁣ 1 tbsp avocado oil (or oil choice)⁣ 2 tsp sea salt⁣ .⁣ Broccoli🥦⁣ 2 cups broccoli, chopped into bite sized pieces⁣ 2 Tbsp filtered water⁣ .⁣ Cheese Sauce🧀⁣ 1/4 cup vegan butter⁣ ¼ cup all-purpose flour⁣ 1 cup plant milk⁣ 1 cup vegan cheddar cheese⁣ ½ tsp garlic powder⁣ 1/4 tsp black pepper⁣ ½ tsp apple cider vinegar⁣ .⁣ INSTRUCTIONS:⁣ 1. Preheat the oven to 400F / 204C. Pierce each potato 3 to 4 times with a fork. Using a brush cover your potatoes with a layer of oil and place them on a large baking pan with raised edges. If you don’t have a raised baking pan line your pan with foil so it can catch the oil drippings. Sprinkle the outsides of the potatoes with sea salt and bake for 20 minutes. Take out and flip, and bake for an additional 20 minutes. Bake for longer if you are using large potatoes.⁣ 2. Heat a pan on medium heat. Once hot, add the chopped broccoli and water. Cover pan with a lid and steam broccoli for 4-5 minutes or until the broccoli is tender. ⁣ 3. Heat a saucepan on medium heat. Once hot, add the butter and flour and whisk until a thick paste has been formed. Add the plant milk, vegan cheddar cheese, garlic powder, and black pepper to the saucepan. Constantly whisk for 4-5 minutes until the cheese melts. Once the cheese melts turn the stove top on low.⁣ 4. Make a medium slit on the top of the potato. Stuff it with the steamed broccoli and drizzle with the cheese sauce. Enjoy!

Finally, don’t make a tragic mistake and forget to poke holes in your potato before sticking it in the oven! Why? Well, it’s possible for the heat and moisture inside of the potato to build up and explode without poking escape holes in the spud. That’s definitely a kitchen faux pas!

This baked potato soup is anything but ordinary. You’ll love how all of the tastes of the ingredients mix, especially on a cold night.

Ingredients

For the baked potato soup the ingredient list includes:
1/2 cup fat-free chicken broth
2 medium russet potatoes
3 slices bacon
6 tablespoons chopped chives
1 1/2 cups 1% reduced-fat milk
16-oz head of cauliflower
freshly cracked black pepper
1/2 cup light sour cream
10 tablespoons reduced-fat shredded cheddar cheese

You need to wash the potatoes and cut the cauliflower head into florets before you start cooking.

Instructions

Use a fork to poke the potatoes, then cook them in the microwave for 5 minutes on high, then add 3-5 more minutes so that they become softer. You should now peel them.

Get a pot with water and steam the cauliflower florets.

Remove the water and put the florets in the pot. Combine them with the potatoes, chicken broth, and the milk. Cook them until they start boiling.

Once it’s done, you can place them in a blender to create a puree.

You can continue cooking them together with half the chives, sour cream, salt, and pepper for up to 10 minutes. Mix it often.

Serve the baked potato soup with cheese on top, bacon and chives.

This baked potato soup is anything but ordinary. You’ll love how all of the tastes of the ingredients mix, especially on a cold night.

Ingredients

For the baked potato soup the ingredient list includes:
1/2 cup fat-free chicken broth
2 medium russet potatoes
3 slices bacon
6 tablespoons chopped chives
1 1/2 cups 1% reduced-fat milk
16-oz head of cauliflower
freshly cracked black pepper
1/2 cup light sour cream
10 tablespoons reduced-fat shredded cheddar cheese

You need to wash the potatoes and cut the cauliflower head into florets before you start cooking.

Instructions

Use a fork to poke the potatoes, then cook them in the microwave for 5 minutes on high, then add 3-5 more minutes so that they become softer. You should now peel them.

Get a pot with water and steam the cauliflower florets.

Remove the water and put the florets in the pot. Combine them with the potatoes, chicken broth, and the milk. Cook them until they start boiling.

Once it’s done, you can place them in a blender to create a puree.

You can continue cooking them together with half the chives, sour cream, salt, and pepper for up to 10 minutes. Mix it often.

Serve the baked potato soup with cheese on top, bacon and chives.
