Tips For Making the Perfect Jacket Potatoes

Potatoes are the perfect side dish for any meal and there are tons of different types of potatoes to choose from. One of our favorite ways to eat potatoes is jacket potatoes. Jacket potatoes (aka as baked potatoes) are fluffy on the inside and crispy on the outside. When they’re done cooking, they’re served with fillings and condiments like butter, cheese, sour cream, gravy, ground beef, and baked beans. So how can you get the perfect jacket potato that’s fluffy and crispy at the same time?

It all starts with choosing the right potato and in this case, Russet or King England potatoes are ideal. Their size and flavor are great for baking. The next step is to slice a cross-shape into your potatoes, about 1/4 inch thick. This makes them fluffy inside because it allows for the steam to escape. To get a crispy outside, brush the potatoes with extra virgin olive oil. Lastly, season them generously with salt and pepper.

Some like it hot!🔥I don’t know about you, but chickpeas are one of my favorite legumes. There are so many ways you can dress these guys up, and I absolutely love them buffalo style with mashed avocado in a potato. 🥔💥🥑⁣ ⁣ These are worth a try! They are also awesome just over greens, in tortillas/wraps or even by themself. Enjoy! 👩‍🍳💚⁣ ⁣ I wanted to have left overs so I used…⁣ 2 cans of chickpeas, rinsed ⁣ 1/2 large sweet onion or 1 small diced⁣ 3 cloves garlic minced⁣ 2 carrots diced⁣ 2 stalks celery diced⁣ Buffalo Sauce⁣ 1/2 cup buffalo sauce⁣ 2 tbsp tahini⁣ 2 tbsp vegetable broth⁣ 1 1/2 tbsp nutritional yeast⁣ 2 tsp coconut sugar (optional)⁣ Whisk all sauce ingredients or add to a small blender to mix.⁣ ⁣ Dry sauté onion or in a bit of vegetable broth for 3-5 min. Add garlic for about a minute more. Then add carrot and celery (a bit more vegetable broth if pan is to dry) and cook for about 5 min. You want them tender but to still have a bit of crunch. Next add chickpeas and sauce and stir to combine and cook until heated all through. For the avocado mash, I simply mashed avocado with a bit of lime and sriracha.⁣ ⁣ Follow for more @espralalife @espralalife Tag your friends who may like this 😊😊 📷: @thelittlecityseed

Now it’s time to put them in the oven. They need to bake at 400 F for about 1 1/2 to 2 hours. Your next step is to take them out of the oven and to slice deeper into the existing cuts. Then place the potatoes in the oven for another 10 minutes.

As soon as your potatoes are done cooking, add butter and the toppings you choose. Don’t be afraid to get creative with your add-ons and enjoy your fluffy, crispy jacket potatoes!
