This easy soup uses only a few ingredients and is effortless to make. The sweet, creamy pumpkin is complemented by the tasty onions, garlic, and herbs and makes for a simple yet delicious soup that is warming and comforting. You can easily freeze this soup so it’s ideal to make a large batch to have extra portions to enjoy at a later date.
Ingredients:
(Serves 4)
- 1 pumpkin
- 2 large white onions
- 3 cloves garlic
- 2 sticks celery
- 2 cups veg stock
- 1 tablespoon dried thyme
- 1 tablespoon smoked paprika
- Salt and pepper, to taste
Instructions:
- Slice the pumpkin in half.
- Remove the seeds and the stalk.
- Remove the pumpkin skin.
- Chop the pumpkin into small chunks.
- Finely slice the onion, celery, and garlic.
- Heat some oil in a large pot.
- Add the pumpkin and onion.
- Fry for 10 minutes and then add the celery, thyme, paprika, salt, and pepper.
- Fry for another 10 minutes and then add the garlic.
- Fry for another 5 minutes and then add the veg stock.
- Increase the heat and leave to simmer for 15-20 minutes.
- Remove from the heat and blitz until smooth using a stick blender.
- Return to the heat for another 5-10 minutes, stirring frequently.
- Serve hot with some crusty buttered bread.
