This Creamy Pumpkin Soup is a Crowd-Pleasing Hit

This easy soup uses only a few ingredients and is effortless to make. The sweet, creamy pumpkin is complemented by the tasty onions, garlic, and herbs and makes for a simple yet delicious soup that is warming and comforting. You can easily freeze this soup so it’s ideal to make a large batch to have extra portions to enjoy at a later date.

Ingredients:

(Serves 4)

  • 1 pumpkin
  • 2 large white onions
  • 3 cloves garlic
  • 2 sticks celery
  • 2 cups veg stock
  • 1 tablespoon dried thyme
  • 1 tablespoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Slice the pumpkin in half.
  2. Remove the seeds and the stalk.
  3. Remove the pumpkin skin.
  4. Chop the pumpkin into small chunks.
  5. Finely slice the onion, celery, and garlic.
  6. Heat some oil in a large pot.
  7. Add the pumpkin and onion.
  8. Fry for 10 minutes and then add the celery, thyme, paprika, salt, and pepper.
  9. Fry for another 10 minutes and then add the garlic.
  10. Fry for another 5 minutes and then add the veg stock.
  11. Increase the heat and leave to simmer for 15-20 minutes.
  12. Remove from the heat and blitz until smooth using a stick blender.
  13. Return to the heat for another 5-10 minutes, stirring frequently.
  14. Serve hot with some crusty buttered bread.
