Ingredients:

  • 3 1/2 pounds chicken parts
  • 2 teaspoons salt (plus more for seasoning the chicken)
  • 1/2 teaspoon ground black pepper (plus more for seasoning the chicken)
  • 2 large eggs
  • 1/4 cup milk
  • 2 1/2 cups crushed corn flakes

Instructions:

  1. Preheat the oven to 350 F. Lightly oil a baking sheet.
  2. For the chicken, salt and pepper it to taste and then set it aside.
  3. Whisk together the eggs and milk in a shallow bowl, and then set it aside.
  4. In another bowl, combine the corn flakes with 2 teaspoons of salt and 1/2 teaspoon of ground black pepper. Set aside the cornflake mixture.
  5. Dip the chicken in the egg mixture and then coat it with the corn flake mixture. Pat the mixture onto the chicken so the crumbs stick to it.
  6. Put the chicken skin side up on the baking sheet.
  7. Cook until the chicken is crisp and golden, about 45 to 60 minutes.
