Ingredients:
- 3 1/2 pounds chicken parts
- 2 teaspoons salt (plus more for seasoning the chicken)
- 1/2 teaspoon ground black pepper (plus more for seasoning the chicken)
- 2 large eggs
- 1/4 cup milk
- 2 1/2 cups crushed corn flakes
Instructions:
- Preheat the oven to 350 F. Lightly oil a baking sheet.
- For the chicken, salt and pepper it to taste and then set it aside.
- Whisk together the eggs and milk in a shallow bowl, and then set it aside.
- In another bowl, combine the corn flakes with 2 teaspoons of salt and 1/2 teaspoon of ground black pepper. Set aside the cornflake mixture.
- Dip the chicken in the egg mixture and then coat it with the corn flake mixture. Pat the mixture onto the chicken so the crumbs stick to it.
- Put the chicken skin side up on the baking sheet.
- Cook until the chicken is crisp and golden, about 45 to 60 minutes.
