Tofu can make or break a dish. When you’re looking to avoid meat or chicken, tofu is often a huge piece of the meal and needs to be bold, tasty, and satisfying. The best way to do this is with a marinade sauce that really grabs you. But which marinades are the best for tofu?

Mustard

Mustard goes beautifully with tofu. The strong flavor gives it that much-needed punch and stops the tofu from being too bland and blending into the background of the dish.

Ginger

Ginger is another bold flavor that helps the tofu hold its own. A ginger marinade particularly complements Thai curries and south-eastern Asian noodle dishes.

Sweet Chilli

A sweet chili marinade is one of the most versatile options you can choose. It goes great with most noodle dishes, cheese-based recipes, and salads. It also doesn’t require as much time to marinate as the others.

Just Go With It

The beauty of cooking is that sometimes you can be an artist in your own kitchen. We feel that it’s important to experiment with different ingredients and mixtures, to see what really sits well with your taste buds. So have a blast and see if it deserves a repeat!

Lemongrass is an herb native to a few parts of the globe, but most specifically Asia. Lemongrass is used in loads of different dishes, from curries to soups to tea. But, lemongrass is not something you can use right away in your dishes, because it is a long stalk that needs to be treated correctly. However, it is very simple to master and once you do, you won’t be short of ideas of how to use it.

How to prepare it:

The way to prepare the stalk is simple. First, start off by cutting the end of the stalk. Then, smash the entire stalk with a hard wooden spoon, a rolling pin, or anything hard. This will break the stalks up just enough to release the juices. Then, cut them in the bias, or diagonally.

When to use:

Lemongrass is a key ingredient in many dishes. Some of the more famous ones include tom yum soup, larb, green curry paste, and more. Adding lemongrass to your dishes will give you slight citrus notes, and a boost of all around freshness. You can also boil it with just water to make tea, which is said to be very healing as well as delicious.

Black Pepper

Gradually Build

After you’ve experimented, try to add other spicy foods to the side of your dishes, like spicy sauces such as salsa. That way you can use a little bit on your food without overwhelming your palette, which will help gradually build up your tolerance.

Coolants

Once you start eating more spicy food, make sure you have things to cool down your mouth in case it gets too extreme. Any sort of dairy product is great because it has casein, which helps coat your mouth and level out the spiciness.
