If you ever make something that only calls for the whites of the eggs, don’t throw away the yolks! Just because you don’t need them for that recipe doesn’t mean they should go to waste. Instead, make one of these recipes and become inspired to be less wasteful and make more delicious things.

Mayonnaise

If you love mayo and want to give it a try making it yourself, now is a perfect time! All you have to do is combine 2 egg yolks with 1 teaspoon of vinegar or lemon juice, 1/2 teaspoon of salt, and 1/2 teaspoon of dry mustard if you want. Take an immersion blender and start mixing the ingredients, while you slowly pour in 1 cup of any kind of oil you want. It’s that easy!

Key Lime Pie

The custard part for Key lime pies are egg yolks, so all you have to do is combine 4 of them with a can of condensed milk as well as 1/2 cup of freshly squeezed juice and you have your filling! Pour into a graham cracker crust and you’re set.

Lemon Curd

This dessert spread is super easy to make because you are only combined egg yolks with sugar and lemon juice! Cook over low heat to combine until it thickens and serve at any breakfast or brunch.

Silky-smooth, creamy, zesty and rich – this is how we would describe lemon curd, one of the most delicious dessert topping you could possibly make. If you love a citrusy taste, a jar of homemade lemon curd is the best thing to have in your kitchen.

This zesty dessert is extremely versatile and can be used as a filling, topping, or spread. You can spread it on your cookies, fill pancakes and muffins or use it as a topping for cheesecake. The options are endless!

It’s worth mentioning that you can probably buy lemon curd in your local grocery store, but they’re usually pretty expensive. Plus, you can easily make even more delicious lemon curd at home in only 30 minutes. When it cools, transfer it to a jar and store in fridge for up to two weeks.

Ingredients     

  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup lemon juice (about 2 lemons)
  • 1/4 cup butter, cubed
  • 1 tablespoon grated lemon zest

Instructions

  1. In a small heavy saucepan over medium heat, whisk eggs, sugar and lemon juice until blended.
  2. Add butter and lemon zest; cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon.
  3. Transfer to a small bowl; cool 10 minutes. Refrigerate, covered, until cold.
