The microwave is often a lifesaver when you have limited time. But did you know microwaves have the potential for cooking meals from scratch? Here are three surprisingly delightful meals you can whip up using just your microwave.

Microwave Veggie-Packed Quiche

Whisk an egg and milk in a mug, season with salt and pepper, then mix in vegetables, cheese, and optional ham or bacon. Microwave on high for about 1 minute and 30 seconds. This quick, customizable quiche is ideal for breakfast or a speedy lunch.

Microwave Chicken and Rice Pilaf

Yes, you can cook raw chicken and rice together in the microwave! This dish is a complete meal with protein, carbs, and vegetables. To make it, combine 1/2 cup long-grain rice and 1 cup chicken broth in a microwave-safe dish. Add diced chicken, mixed vegetables, and seasonings. Cover and microwave for 15-18 minutes. Let it stand for 2 minutes before serving, and enjoy.

Microwave Loaded Baked Potato

This comforting classic is significantly quicker when made in the microwave, but just as good. Pierce a russet potato and microwave for 5-7 minutes, turning halfway. Once soft, cut it open, fluff it with a fork, and top it with cheese, sour cream, chives, cooked bacon, and butter.

It might sound strange, but you can actually fry, poach, scramble, and make egg omelettes in the microwave in a matter of minutes. You don’t need to fiddle around with pans —simply pop your eggs in the microwave, pierce the yoke, and voila! Here’s what you can try.

Fried Eggs

To make fried eggs, simply melt some butter or margarine on a microwavable dish. When it’s melted, break an egg onto it and pierce the yolk. Microwave on full for about 40-60 seconds, or until the white is cooked through.

Poached Eggs

Poached eggs in the microwave really can be as good as on the pan! Simply pour boiling water into a microwavable bowl and add a pinch of salt. Break the egg into the water and microwave for around 30 seconds, or until the white is solid. Serve with salt and pepper.

Scrambled Eggs

Whisk your eggs in a microwavable bowl and season with salt and pepper, and then microwave for around 30 seconds before serving. Top tip: take the scrambled eggs out just before they look ready. They will continue to cook outside the microwave.

Omelette

Break eggs into a greased tray, whisk, season with salt and pepper, and cook in the microwave for 45-60 seconds.

Baked potatoes can be a delicious and nutritious meal all year round. But we don’t always have hours to wait while they bake in the oven. Microwaving your potatoes can be an excellent way to enjoy them with minimum fuss. Here are 5 reasons you should try to eat more microwave baked potatoes.

Quick

One of the best benefits of microwave baking your potatoes is that you can prepare them in a matter of minutes. Rather than waiting hours for them to bake in the oven, you can pop them in the microwave for 7-9 minutes.

Tasty

Microwave baking potatoes give you fluffy baked potatoes in minutes. They are just as nice as an oven-baked potato, although the skin will not be as crispy. If you want to crisp up the skin, you can put it in the oven for about 10 minutes.

Energy

Potatoes are an excellent source of slow release energy. If you eat a baked potato for lunch, it will provide energy throughout the day.

Nutrition

Baked potatoes are also packed full of crucial nutrients. They are rich in potassium, vitamin C and vitamin B.

🥬🥔Crispy baked potato with sautéed cabbage and vegan ‘chorizo’ sausage. 🥬🥔 This may sound like a very random combination but it is really tasty! 😋 I have been trying to convince my boyfriend that cabbage is delicious, so I have used it in a variety of recipes. 🥬 I think it’s important to try to cook vegetables in a variety of ways before children or adults in this case decide whether they like something or not. So far I have made dumplings, egg fried rice and sautéed cabbage and he has enjoyed each dish. I just don’t want the poor cabbage to feel left out 😜 Ingredients Half a head of cabbage Half an onion 2 cloves of garlic Vegan chorizo 2 Tbsp of butter or olive oil Potato Tsp Lemon juice Tsp Paprika Salt and pepper Instructions: Preheat the oven at 150 degrees celsius. Place a pierced potato in the microwave for 7-8 minutes. When the oven is hot place the chorizo sausages in the oven till the beginning to brown. Take the potato out of the microwave and place on some tinfoil. Rub the potato in paprika, lemon juice, salt and pepper, and tbsp of olive oil. Once the potato is covered in this wrap in tinfoil and place in the oven for 30 minutes. In a medium heated pan add a tbsp of butter or olive oil. Allow to heat and then add garlic, and onion. After 1 minute add the cabbage to the pan and season. When the chorizo sausages have cooked chop them into pieces and add to the pan. Also add the juice from the chorizo sausages and mix in altogether. When everything is ready plate up and enjoy! 🤤 #veganrecipes #vegetarianrecipes #teachersofinstagram #healthyeating #bakedpotato #cabbage #fussyeaters #glutenfree #kidsmeals #blw #dairyfree #healthyfamily #familymealideas #cheapmeals #eatwellforless #healthykids #cookingforkids #healthyvegetarian #vegetariankids #dinnerideas #raisingkids #momlife #lunchboxideas #lunchideas #kidscooking #smallbusinessowner #irish #discoverunder1k #healthyfood

Not only are eggs a delicious addition to most meals, but they are also packed full of protein and minerals. If you don’t have much time on your hands to prepare them but still want to get your egg fix, there’s a simple solution. Here are three foolproof ways to prepare eggs in the microwave in minutes.

Scrambled Eggs

To make scrambled eggs in the microwave, simply break two eggs into a microwaveable bowl and beat them together until the yokes are all mixed in with the egg whites. Next, season them with salt and pepper and mix them before microwaving for two minutes on high heat. They’re best served on crunchy toast or in a rocket salad.

Baked Egg

To make poached eggs in the microwave just break an egg into a small microwaveable dish. Try to make sure that the egg fits snugly into the dish. When the egg’s in, pierce the yolk so that it doesn’t explode and cook the egg in the microwave for about one minute. Once the egg white has turned white, serve with some salt and pepper.
