There’s nothing quite like discovering a snack that’s tasty and healthy at the same time, and baked oatmeal cups just happen to fall under both of these categories.

Brittany Mullins, who runs food blog Eating Bird Food, presented us with a recipe for this gluten-free vegan snack, which comes in four different flavors.

You can check out how they all look in in her YouTube tutorial, and we’re bringing you a recipe for our favorite, apple cinnamon baked oatmeal cups.

Ingredients:

  • 3 cups rolled oats
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 1/2 cups milk
  • 2 tablespoons ground flaxseed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 2 tablespoons natural almond butter
  • 1 teaspoon vanilla extract
  • 1/2 cup diced apple

Instructions:

  1. The oven should be preheated to 350°F while you use silicone or paper liners to line a 12-cup muffin tin. Avoid sticking by spraying liners with non-stick spray.
  2. Rolled oats, cinnamon, baking powder, and salt should be mixed in a large bowl.
  3. Use another bowl to whisk almond milk and flaxseed together. After letting the mixture sit for about five minutes, add wet ingredients – applesauce, maple syrup, almond butter, and vanilla.
  4. Continue by mixing wet ingredients with dry ones, and gently stir them until properly combined.
  5. Pour wet ingredients into the large bowl with the dry ingredients. Gently stir to combine and add 1/4 cup of the diced apples to the mixture.
  6. Pour the mixture into muffin tin, making sure it’s divided equally, and top each cup with the rest of the diced apples.
  7. Bake until the center of the cups has set, for approximately 30-35 minutes, and let the cups cool before serving them or storing them in the fridge.

Oatmeal is one of the best ways to start off your day. It is really filling, because it’s a whole grain, and it also expands in your stomach, keeping you full for longer!

Add in the right toppings, and you have a dynamite breakfast that cannot be beat. The best thing is that you can so easily make it vegan, there’s no reason not to!

Recipe

  1. Start off by pouring in twice as much water, milk, or plant milk as you have oats.
  2. Season the liquid with spices like cinnamon, cloves, and nutmeg, along with just a pinch of salt to bring out all the flavors.
  3. Once the liquid starts to boil slightly, pour in the oats and stir it. Turn down the heat to low and allow it to cook until all the liquid is absorbed.
  4. If you want to take it up a notch, add in some nut butter so it can melt into the oatmeal. You can also smash or slice a banana and add it in there as well to cook with the oats.
  5. Once the liquid has been absorbed, pour it into a bowl and use whatever toppings you like. For extra protein, you can add soaked chia seeds or ground flax seeds.

Overnight Oats makes the perfect, easy and healthy make-ahead breakfast. They have become many people’s favorite as you can just make them the night before and wake up the following morning with a breakfast already served. Overnight Oats can be your to-go breakfast when working from an office.

These three overnight oats ideas are like having dessert for breakfast.

CINNAMON APPLE PIE OVERNIGHT OATS
Ingredients:

Oats:
* 1 1/2 cups old-fashioned rolled oats
* 1 teaspoon ground flaxseeds
* 1 teaspoon ground cinnamon
* 1 teaspoon ready-mixed or homemade apple pie spice
* 1/2 – 1 tablespoon pure maple syrup
* 1/2 cup unsweetened applesauce
* 1 3/4 cups almond milk (or milk of your choice)
* 1/4 cup chopped apples
Caramelised Apple Topping:
* 1 large apple, chopped into 1/4 inch pieces
*1/2 tablespoon coconut oil
*1/2 tablespoon maple syrup
*1/2 teaspoon cinnamon
Toppings:
Pecans or walnuts.
Extra almond milk for serving is also optional.

Instructions:

For the Overnight Oats: Combine all the ingredients in a large resealable bowl or divide into mason jars or any other type of small resealable container in the order as they appear. Give it a good stir, cover with the lid, and place in the refrigerator overnight or at least 4-5 hours.

For the Apple Topping: In a small saucepan, heat coconut oil over medium-high heat. Add apples, maple syrup, and cinnamon and saute for about 5 minutes or until the apples turn golden brown and begin to soften. Remove from heat and set aside. (You can make this ahead of time and place in a covered container in the refrigerator).

When ready to eat, remove from the refrigerator and give the oats a good stir or shake and garnish with apple pie topping, add desired toppings on top.

ESPRESSO OVERNIGHT OATS (with Salted Date Caramel)
Ingredients:

* 1 cup rolled oats
* 1 tablespoon chia seeds
* 3/4 cup almond milk
* 1/2 cup strong cold press OR brewed coffee
* 2 tablespoons maple syrup
* 1 tablespoon vanilla extract
* 4 Medjool dates, pitted
* Pinch of salt
* Water

Instructions:
For the Overnight Oats: Mix all dry ingredients together in a large bowl. Add wet ingredients and mix again. Place in the refrigerator, covered, for at least 2 hours or overnight.

For the Date Caramel: Place 4 Medjool dates into a high-speed food processor. Process on high until pureed. Depending on how soft your dates are, you may need to add water. Add the 1/2 teaspoon.

BLUEBERRY PANCAKE OVERNIGHT OATS
Ingredients:

* 1 cup rolled oats
* 2 tablespoons ground flax meal
* 1 cup Almond almond milk
* 1/2 teaspoon butter extract (or 1 tablespoon butter)
* 3 tablespoons maple syrup (plus extra for optional drizzling)
* 1/4 cup pecan halves
* 1/2 cup blueberries

Instructions:
Mix together the oats, flax meal, almond milk, extract (or butter), and maple syrup together. Keep in an airtight container in your refrigerator overnight, or at least three hours. The next morning, stir in the pecans and blueberries and eat cold or warmed up.
