Vegan cooking can be a bit of a different beast from regular cooking, and sometimes when you’re a new vegan, you have to re-learn some of the fundamentals of cooking to a whole new type of cuisine. So if you’re new to a plant-based diet, start with mastering these two recipes, which will help carry you through many, many meals.

Tofu Scramble

Everybody knows that tofu is a major staple of a vegan diet. It’s a great source of protein and it’s also extremely versatile, with the ability to camouflage easily into nearly any type of dish. One of the best things to learn how to do with tofu is to create a tofu scramble, which mimics the flavor, texture, and look of scrambled eggs. You can eat it alone, in a breakfast burrito, in a pad thai, and more.

Lentil Stew

Another staple that any vegan should always have in their pantry is lentils, which are great for the same reasons tofu is. It’s versatile, easy to keep on hand, and a great plant-based source of protein. Learning how to whip up a simple lentil stew is sure to serve you well, because it’s quick, hearty, filling, and comforting.

Spices are everything in Indian cooking. They are what brings life to each dish in its own unique way. Some of the most essential spices are cardamom pods, cumin seeds, mustard seeds, garam masala, and curry powder. A lot of Indian dishes are vegetarian for religious purposes, so they use a lot of legumes in their dishes. Some basic things to have in your pantry are chickpeas and lentils, both which are used very often in different dishes and curries.

Basmati Rice

Rice is served almost always with Indian food, so it’s essential you have it on hand. If you want to be a little healthier, you can also get the whole wheat variety.

Whether you have a roommate who always has friends over or you’re just someone who loves to host, you never know when you’ll need to do some last minute hosting. However, just because you didn’t have time to plan it doesn’t mean you can’t still throw something nice together. Here are some basics you can keep in your pantry for a last minute get-together.

Wine

Red wine doesn’t need to be refrigerated so that’s a great drink to be able to offer people. If you have the room in your fridge, keep a few nice beers or bottle of white wine.

Pretzels

An unopened bag of pretzels can last a while, so keep them in there and just pour them into a bowl before everyone arrives, or even after they have.

Olives

Olives are pretty inexpensive and are a fun and different kind of snack to put out on the table. They can also be used as a garnish for martinis and other cocktails, so it’s good to keep a jar or can on hand.

Produce

Amid all the alcohol and snacks, it’s important to put even a small plater of fruits or vegetables out. It doesn’t have to be fancy, but it will make people feel a little healthier.
