Ingredients:

  • 1 teaspoon honey
  • 1 small lemon
  • 1 clove garlic
  • 1/4 cup almonds
  • 1/4 cup olive oil
  • 5 ounces arugula
  • Salt
  • Ground pepper

Instructions:

  1. Preheat your oven to 350°F. Spread the almonds onto a baking tray and cook until lightly golden. Allow to cool for 5 minutes.
  2. Cut the lemon into quarters and deseed. Place in a food processor and pulse until fully chopped.
  3. Add half of the almonds, honey, and garlic together with a pinch of salt and pepper to the mix. Pulse until blended.
