With a new year comes new goals and I know a lot of you are prepping for #JanuaryWhole30 and some of you may be starting it today! As I mentioned previously, I am not doing one now but I am whipping up all kinds of yummy #Whole30recipes therefore will be mostly eating #Whole30 meals, which I honestly need right now! • • I am introducing one main ingredient each week and giving you ideas of what to make for different meals using that one ingredient. I’m trying to make this flavorful and incorporate some spice and Mexican flavors as much as I can. Whole 30 does NOT mean flavorless chicken breasts and steamed veggies at all and I want to make sure you get ideas to spice it up, not get bored, and certainly not quit! • • 🇲🇽 ENCHILADA SAUCE: -Makes about 2 cups 🌶 2 tbsp chili powder. 🌶 1 tbsp onion powder. 🌶 1/2 tbsp garlic powder. 🌶 1 tsp cumin. 🌶 1/4 tsp chipotle or cayenne powder * 🌶 salt to taste. 🌶 1 cup chicken broth. 🌶 1 can (8 oz) tomato sauce. 🌶 1 tbsp arrowroot powder (optional to thicken). ——————————————— 💃🏽Mix the spices together, add them to a hot pot/pan and whisk until thoroughly combined and dissolved. Add in tomato sauce and bring to a simmer. At this point you can take about 1/4 cup of the sauce out, add the arrowroot powder to that and whisk until completely dissolved. Add the mix back into to the sauce, stir, and let come to a boil. (You don’t have to do this last step but the arrowroot powder will help thicken the sauce). Also note that the chipotle or cayenne powder is optional for extra heat. I like things spicy so I add it on. You can taste the dry mix before adding more heat as sometimes plain chili powder can pack a little kick here and there. • • Let it cool before storing in an airtight container in the fridge. I’d use it within a week, good for up to 2 weeks. • Let me know if you try it out! It’s certainly not “authentic” enchilada sauce, (I have a good recipe for that too!), but it’s easy, quick, and convenient! • • #whole30journey #whole30español #enchiladasauce #enchilada #whole30latina #mexicaneats

You can now combine the tomato sauce with all the other remaining ingredients. Stir them very well. Add this mixture to the pan, and mix again.

Continue cooking the enchilada sauce for 10 more minutes. The stove should be set on medium heat.

When you’re done, you can add it to your enchilada dish or serve it on the side for dipping. It’s so good, you’ll be obsessed.
