Corn is an amazing food product. It’s a highly versatile carb that can be used to make tortillas, cornmeal, polenta, and much more. It is also enjoyed in vegetable form, where it can be added to many dishes for a sweet, fresh burst of flavor. This corn chowder is the perfect way to enjoy the taste of corn while pairing it with ingredients that bring out its juicy flavor even more. This recipe serves four and is ideal for a tasty, healthy lunch.
Ingredients:
- 2 cups corn kernels
- 1 large white onion
- 2 sticks celery
- 3 cloves garlic
- 3 large potatoes
- ¼ cup salted butter
- 2 cups milk
- 1 cup chicken stock
- 3 tablespoons soy sauce
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
Instructions:
- Finely slice the onion, garlic, and celery.
- Peel and chop the potatoes into 2 cm cubes.
- Place a large pot on low to medium heat with half the butter.
- Add the onion and fry for 5-10 minutes. Add the garlic and celery and fry for a further 5-10 minutes.
- Add the potatoes, most of the corn, and the rest of the butter. Add the thyme, paprika, salt, and pepper. Fry for 10-15 minutes.
- Add the milk, stock, and soy sauce and increase the heat.
- Leave to simmer for 25-30 minutes, stirring occasionally.
- Remove from the heat and blitz until smooth using an immersion blender.
- Add the remaining corn and return to the heat for 10 minutes while stirring.
- Serve hot with crusty bread.
