This Roasted Spicy Eggplant Dish is a Delight For All

Ingredients

For this dish, you’ll need:

  • Eggplant
  • Onion
  • Carrot
  • Spring onion
  • Garlic
  • Mangetout
  • Sesame seeds
  • Soy sauce
  • Chinese five-spice
  • Szechuan paste
  • Udon noodles

Roast Your Eggplant

Cut your eggplant into strips, and then drizzle them with olive oil, Chinese five-spice, salt and pepper. Then, bake it in the oven for 25-30 minutes at 400 F.

Cook Vegetables and Toast Sesame Seeds

While the eggplant is roasting, gently toast the sesame seeds in olive oil for 1-2 minutes. When ready, pour them into a bowl and leave for later. Next, fry the onion, carrot, garlic, and mangetout in some more olive oil for about 6-7 minutes. Season with salt and pepper for some extra flavor.

Combine and Serve

Add the noodles to the vegetables along with the Szechuan paste and soy sauce. Mix together until the sauce is covering the veg and the noodles. After 1-2 minutes, pour in the toasted sesame seeds and season with some more salt and pepper. Finally, add the roasted eggplant and some chopped spring onion before serving.
