Roasted Brussels Sprouts with Balsamic & Parmesan

After trying this recipe once, it rapidly turned into our favorite side dish. The Brussels Sprouts are not only crispy but they are also topped with Parmesan, can it get any better than that?

Ingredients:
* 1 pound brussels sprout, cut in half
* 2 tbsp olive oil
* A pinch of salt
* 1/4 tsp ground pepper
* 1/2 cup sliced shallots
* 1 tbsp balsamic vinegar
* 1/4 cup finely grated parmesan

Preparations:
1. Preheat oven to 425 degrees.
2. Mix the brussels sprouts, olive oil, salt and pepper in a large bowl. Spread them evenly on the baking sheet.
3. Roast for 8 minutes and the remove from the oven.
4. Add shallots to the pan and stir to combine.
5. Roast for 8 more minutes.
6. Remove from oven and cover the sprouts with parmesan and balsamic vinegar and mix.
7. Put in the oven for 2 more minutes until the cheese is melted.
