The Best Avocado Fries with Aioli

We all love avocado’s, don’t we? And we all love fried food, are we wrong? So why not to combine both and make some delicious Avocado Fries. They can be served with Aioli or any other sauce and are perfect for an appetizer or a snack accompanied by a beer.

Ingredients:
* 2 firm avocado’s, cut in wedges
* Cooking spray
* 1/2 tsp salt
* 1/4 tsp ground pepper
* 1/3 cup white whole-wheat flour
* 2 large eggs, lightly beaten
* 1 cup whole-wheat panko breadcrumbs
For the sauce:
* 1/4 cup olive oil
* 1 more egg yolk
* Lemon juice
* 1 tbsp mustard
* 1 Garlic clove, chopped

Preparations:
1. Preheat oven to 425 degres. Coat the baking sheet with cooking spray.
2. Season avocado’s with salt and pepper.
3. Place the flour, eggs and panko in 3 separate shallow dishes.
4. Coat the avocado wedges in the flour then in the eggs and then coat both sides with panko.
5. Place the wedges on the baking sheet. Coat both sides with cooking spray.
6. Bake until golden brown. Approximately 25 to 30 minutes.

For the Sauce:
Process the garlic, salt and egg yolk in a food processor. Slowly add some oil through the feed tube, processing to form a think mayonnaise and then transfer to a bowl. Stir in the lemon juice and mustard and add water according to taste.
