Kelsey Youngman, the food editor at Food&Wine recently shared her best tips for making the perfect scrambled eggs. Even though you may think there’s not a lot to add to a dish as simple as scrambled eggs, we urge you to try her tips and see the difference for yourself. They are very simple, but will get your breakfast to another level!

Cracking the Eggs

If you want to avoid shell pieces in your breakfast, Youngman suggests cracking the eggs on a flat surface instead of the edge of the bowl. Also, use your both hands; there’s no need to squash the egg by trying to open it in half with one hand.

Salt

You can add salt before pouring the egg mixture into the pan. In fact, adding the salt will help them retain moisture and be fluffier.

Milk

Optionally, you can get a splash of milk or cream to your eggs, but this is definitely not a necessary step.

Whisk with Fork

You want to whisk the eggs with a fork, using ellipse motions until the whites and yolks are perfectly blended.

Cooking

Take a non-stick pan, add a bit of butter for flavor, and add the eggs while the pan is still cold. This will help keep the eggs cook evenly and give you control over the final texture of the eggs.
