]]>The Fruit Salad
Does this look like a fruit salad? It certainly qualifies as one. Zuliya put together this extravagant bouquet made of cucumbers, carrots, avocado slices, and mango rosettes, garnished with tiny mint leaves and pomegranate ruby seeds.
Avocado Pizza
This amazing avocado pizza is an immense idea for all you lactose intolerants out there. Spread pesto all over a pre-baked very thin pizza crust, top it with ample slices of avocado, sunflower sprouts, radishes, and pine nuts. Sprinkle with coarse salt and pepper.
Garden Salad Nutritional Powerhouse
This garden salad is so great because it combines some of the healthiest and trendy vegetables out there. Cooked chickpeas mixed with pesto, roasted broccoli, and lots of Swiss chard are the base for this salad. Zuliya always decorates her salads so attentively and beautifully by spreading avocado and purple radish flowers all over it. She also adds California walnut halves on the side. This salad is a great source of vitamins and very filling too, great for lunch.

]]>My Morning Coffee
Wouldn’t you like your morning coffee to look like that? Jose does, so he makes two panda smoothies in his bear cups, whips up a lot of foam with warm milk, and decorates is with thin slices of strawberries and two coins of milk chocolate.
Yin Yang Blueberry Pie
Just before you place your next blueberry pie in the oven to bake, take this inspiration from Jose and turn your pie into a ‘yin yang – I love you pie.’ So easy.
Dutch painter Van Gogh would have loved to know that Jose’s morning toast looks like his Starry Night painting. A painting Van Gogh painted from the second floor of his asylum bedroom window of a view facing east.
Pancake Party
Next time you’re having friends over for a pancake or Belgian waffle party, take this inspiration from Jose. Spread your pancakes with warm melted chocolate, and fill them up with strawberries, blueberries, raspberries and hazelnut chocolate.
Other great party ideas by Jose are these amazing sugar cones which you can fill up with healthy fruit like frozen raspberries, blueberries, strawberries, pineapple cubes, kiwi coins, and milk, white or dark chocolate, as you like.
Banana Smoothie, Custard or Mousse?
Whether you’re having a banana smoothie, custard or mousse, double it up with twin macaroons and have a couple of polar bears smile at you.

]]>Near the Inca Ruin
It’s a place where you can hike the Inca Trail (short version of the trail of course) and make several life-long friends. As of today, you can stop at the Mil after your hike to taste some of Peru’s ancestral cuisine and other food that local Peruvians grow at incredibly high altitudes, 11,000 ft above sea level.
The Mil
So what are some of the dishes you can expect to catch at the Mil? The delicious Peruvian Inca corn served with fish, farmed in nearby lakes on the mountains. Other dishes include alpaca served with quinoa and colorful root vegetables.
Muray
You can expect to dine at the Mil with approximately twenty other people or less per day, as the hike to Muray is even further than you think and the restaurant is relatively small.

The Mil is co-owned by Virgilio Martinez of Lima, a person who truly knows the restaurant business well, and knows how to create unique and new challenges for his culinary guests.

]]>Chicken Katsu Over Caesar Salad
The Katsu is a popular Japanese dish, it’s a deep fried chicken breast cutlet coated with the favorite crispy Panko crumbs. It’s also known as Tori Katsu and refers to a Zen shout used in the Martial Arts. Serve over Caesar Salad.
Spicy Chicken Breast
So simple to make: just throw in the skillet a thin slice of chicken breast in some pre-heated Canola oil, add a tad of olive oil for taste, spice it up with salt, coarse black pepper and paprika, turn it over twice, cook for about ten minutes and you have a scrumptious juicy meal.
Serve with thyme, fresh green snow peas, some sauteed sweet potatoes in the skin, and a few slices of lemon.
Caramelized Zesty Chicken
This is a real one – two – three recipe! Place in a baking dish the best boneless chicken thighs you can find. Pour generously over it 1 cup honey, 1 cup sweet Teriyaki Sauce, and 1 cup Silan syrup – which is another kind of honey made of dates. Bake in the oven for 50 minutes at 350 degrees Fahrenheit. Serve warm and lick your fingers.

]]>The Poke Bowl
Poke is based on the marinated raw fish salad which originated in Hawaii. It’s served with various fresh vegetables over rice or soba noodles. You choose your own healthy toppings from carrot sticks, cucumbers, green beens, avocado, red cabbage, radish to tofu.
It’s a whole meal served in a bowl, nutritious and filling. The popular bite-size fish are usually salmon and various kinds of tuna – all marinated in sauces like spicy garlic. Those who don’t opt for fish at all, can have tofu cubes poke with soy sauce and sesame.

A truly healthy poke combination is the salmon, guacamole, radish, crispy rice, edamame and nori crisps. New variations on the already so popular poke have popped up and include quinoa, zucchini noodles, roasted black sesame seeds, watermelon radish and pickled green tomatoes.
Enjoy!
