Butternut Squash Casserole is the Perfect Thanksgiving Side

Can you believe that Thanksgiving is next month? Well, nothing screams Thanksgiving like squash and this butternut squash recipe has been in our family for years. Every Thanksgiving it’s highly requested and there are never any leftovers. We’re here to share our family secret recipe with you, so you can have an extra special holiday with your friends and family.

Ingredients:

  • 1/3 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 can (5 ounces) evaporated milk
  • 1 tablespoon vanilla extract
  • 2 cups mashed butternut squash

Topping:

  • 1/2 cup crisp rice cereal
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 2 tablespoons margarine, melted

Instructions:

  1. In a mixing bowl, cream butter and sugar.
  2. Beat in the eggs, milk, and vanilla.
  3. Stir in the squash (mix will be thin).
  4. Pour the mixture into a greased 11 inch x 7 inch x 2 inch baking pan and bake uncovered at 350 F for 45 minutes or until it’s set.
  5. Combine the topping ingredients in a bowl and sprinkle it over the casserole.
  6. Return the casserole to the oven for 5-10 minutes until it starts to bubble.
