Cherry Tomato Pasta For An Easy Weeknight Dinner

While you probably want to pamper yourself with some scrumptious food after a long day at work, slaving away in the kitchen for hours is probably not the way you want to spend your well-earned free time. Fortunately, you don’t have to. Here is a scrumptious cherry tomato pasta recipe you can prepare in as little as 20 minutes.

Ingredients:

  • Kosher salt
  • 1/3 cup olive oil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon sugar
  • 1/2 cup grated Parmesan
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons tomato paste
  • 4 large garlic cloves
  • 5 cups cherry tomatoes
  • 12 ounces orecchiette

Instructions:

  1. Prepare a large pot of boiling salt water and cook the pasta until al dente, according to package instructions. Drain pasta and reserve 1 cup of pasta water.
  2. Heat oil in a skillet over medium heat. Add garlic and cook until lightly golden. Add the tomato paste and cook for another minute.
  3. Add red pepper flakes, tomatoes, and 3/4 teaspoon salt. Cook for 5 minutes and stir occasionally.
  4. Raise the heat to high and add in the vinegar and sugar.
  5. Bring to a boil and add the pasta, Parmesan, and 1/2 cup of reserved pasta water. Cook for another 2 minutes until the sauce thickens.
  6. Serve and enjoy.
