While you probably want to pamper yourself with some scrumptious food after a long day at work, slaving away in the kitchen for hours is probably not the way you want to spend your well-earned free time. Fortunately, you don’t have to. Here is a scrumptious cherry tomato pasta recipe you can prepare in as little as 20 minutes.
Ingredients:
- Kosher salt
- 1/3 cup olive oil
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon sugar
- 1/2 cup grated Parmesan
- 1 tablespoon balsamic vinegar
- 2 tablespoons tomato paste
- 4 large garlic cloves
- 5 cups cherry tomatoes
- 12 ounces orecchiette
Instructions:
- Prepare a large pot of boiling salt water and cook the pasta until al dente, according to package instructions. Drain pasta and reserve 1 cup of pasta water.
- Heat oil in a skillet over medium heat. Add garlic and cook until lightly golden. Add the tomato paste and cook for another minute.
- Add red pepper flakes, tomatoes, and 3/4 teaspoon salt. Cook for 5 minutes and stir occasionally.
- Raise the heat to high and add in the vinegar and sugar.
- Bring to a boil and add the pasta, Parmesan, and 1/2 cup of reserved pasta water. Cook for another 2 minutes until the sauce thickens.
- Serve and enjoy.
